Basically, the ingredients are the same. The difference is in structure, color, texture, and the recipes they are used in:

  • If you make almond flour, you are looking for a fine structure mix, whereas ground almonds structure is a more coarse meal.
  • The texture of almond flour is fluffy, but with ground almonds, it’s more grainy.

First, pour some water into a small pot and bring it to a boil. Once the water is boiling, put the almonds with skin on in the boiling water and let it boil for about 30 seconds to a minute, depending on how much almonds you have (1 cup of almonds = 30 seconds).

When done, pour the almonds and water directly into a strainer. Run them in cold water to cool them down more quickly. 

When they are cold, you should be able to slip the skins off with your fingers. It’s a slow process, but you will become a master peeler once you get the hang.

Store the flour in an airtight container and place it in the refrigerator. If stored in a tightly sealed container, blanched almond flour will last for a couple of months in the fridge.
